- Winemaking process: Grapes are harvested ripe in the first two weeks of October. Grapes are allowed to dry. This process is called appassimento or rasinate (to dry and shrivel)
- Aging/refining: The ageing process takes place in wooden barrels, traditionally in oak casks .
